Perfectly grilled Atlantic salmon fillets with a compound herb butter that melts into the fish for a restaurant-worthy finish.
Mix softened butter with dill, chives, garlic, and lemon juice. Roll in plastic wrap into a log and refrigerate for 15 minutes.
Pat salmon dry with paper towels. Brush with olive oil and season with salt and white pepper.
Preheat grill or grill pan to high heat. Grill salmon skin-side up for 3-4 minutes.
Flip and grill for another 3-4 minutes until just cooked through.
Top each fillet with a slice of herb butter. Rest for 2 minutes before serving.
